Chocolate Chip Keto Pancake Mix from Birch Benders

Sometimes, you just need chocolate chip pancakes. My daughter is home from school for a few weeks and feeling sad about it. So, I grabbed a bag of keto-friendly, chocolate chip pancake mix by Birch Benders, and we got busy in the kitchen. Within a few minutes, she was smiling again. I mean, who doesn’t smile for pancakes?

While I have several keto pancake mixes kicking around in my pantry, I bought a bunch of Birch Benders (3-pack) chocolate chip pancake mixes for my long term storage. Since the pandemic, I have put more emphasis on shelf-stable pantry items for times when my favorite fresh keto items may not be available.

Birch Benders’ chocolate chip pancake mix only requires water (I used coconut milk) and maybe some butter or MCT oil in your skillet to make. If you have a nonstick skillet, like I do, you don’t even need that. Most mixes still require a couple of eggs. But, fewer inputs are better for emergency food storage.  Or, just your average Friday morning.

Today, I used Kerry Gold butter in my skillet. It wasn’t necessary, but I just love the flavor of butter on my pancakes. Plus, fat is a good thing on keto!

I topped them off with Wholesome Yum’s keto maple syrup. I used my electric skillet and my 4″ silicone rings. Using these silicone rings, the mix makes between 8 to 10 pancakes, depending on how much you fill the rings. The uniform size I get from using the rings makes fridge and/or freezer storage much easier.

How to Store Pancakes for Easy Keto Breakfasts

The instructions on the bag make either half the bag or the full bag of pancake mix. Anything I can make ahead of time, I do. So, I just make the whole bag and store the rest. If you plan to use these up in a few days, just keep them in your fridge in a closed container. I like to put a piece of wax paper in between. Reheat in a toaster or oven.

To store the pancakes in the freezer, stack pancakes with a piece wax paper in between, and place in a freezer bag with as much air pushed out as you can. The wax paper is important for freezer storage, or they will stick together and you’ll have a mess when you go to make them. Write the use-by date on the freezer bag. I do 6 months, but I’ve never had them in the freezer long enough to know. Defrost the night before in the fridge, and reheat in a toaster or oven.

Net Carbs

For 2 pancakes with butter and keto syrup, this comes out to about 8 net carbs. These are very filling with plenty of fats and protein. If you are doing 3 meals a day, you may want to eat just 1 pancake. If you are doing intermittent fasting with a late morning meal and early evening dinner, two pancakes should easily hold you over until suppertime.
