It’s Friday night. And in my house, that means Instant Pot Keto Soup. This recipe is basically a meat lover’s pizza in a bowl. It’s got ground beef, pepperoni, and Italian sausage. It’s keto, tasty, and ready with almost no effort.
Pizza on Keto?
The number one food I missed switching to keto was pizza. This was my go to comfort food. I didn’t eat it regularly, but it was my first choice for a treat.
As I got more comfortable with keto cooking, I experimented with every type of keto pizzas. I think I’ve tried them all at some point, like fat head dough, cauliflower crusts, meatza, chicken-crust, individual portobello pizzas, and psyllium husk crust pizza.
They are all good, but they all involve a lot of prep time. That’s fine for me on a weekend. But, pizza wasn’t just a culinary craving. It was also a convenience. Delivery meant no cooking. Frozen pizza meant minimal effort.
None of these above-mentioned keto options were as convenient. On a Friday night, when I’m tired from the week and most want a quick and easy dinner solution, I have zero ambition to mix up my own keto dough. I’ll put out the effort on the weekend, but not during the Monday to Friday grind.
Solution: Instant Pot Keto Pizza Soup
This solves everything- it’s quick, it’s easy, there’s minimal cleanup with just the one pot and the dishes, and it’s keto-friendly. It hits all those pizza flavor cravings. And, just like any pizza, you can change up the “toppings”. My kids love it, and I have to make it at least once a week.
What a bummer to HAVE to eat pizza every week, right?
If you’re like me and not really a gadget gal, the Instant Pot is an electric, multi-function appliance. It’s a pressure cooker, slow cooker, steamer, yogurt maker, soup maker, and more. You can saute in it too, leaving you with only one pot to wash. I have an 8qt Instant Pot.
I rely on the Instant Pot to get meals ready quickly during the work week. Forget to take that pot roast out of the freezer? No problem. The Instant Pot will pressure cook that from frozen, and dinner is ready in an hour.
Between the Instant Pot and my Crockpot, eating keto became a whole lot easier. You set up your meal, walk away, and come back when it’s done. To be honest, when it comes to slow cookers, I still prefer a Crockpot (or other slow cooker) to the Instant Pot’s slow cooker feature. But, for everything else, the Instant Pot is awesome.
They even have one now that’s also an air fryer. The Instant Pot Air Fryer also bakes, broils, sous vides, and dehydrates. (Guess what I’m asking for as a gift this December!)
I got the original recipe from Carb Manager. I’ve tried a bunch of food and exercise trackers. So far, Carb Manager is my hands down favorite. I’ll do a review of it in a future post. There is a free and a paid version of Carb Manager, and the paid version has thousands of keto recipes to pick from.
The original recipe called for ground venison. Sorry, fresh out of that. I use ground beef, plus I’ve changed some of the ingredients from the original. I adore mushroom pizza, so I toss in sliced baby portobellos. Don’t like pepperoni? Switch it up with salami or bacon. Do all ground sausage instead of ground beef. Get creative with your toppings.
I’ve also done this with chicken instead of the ground beef, and added hot sauce for a Buffalo Chicken Pizza version. I served it in a bowl with crumbled blue cheese in the middle. We have a large Portuguese population in my neck of the woods, and chouriço and bell pepper pizza is a local favorite.
Feel free to update this and make it yours. If you do, though, use an app, like Carb Manager, to calculate the carbs to keep you on track.
Just a quick word on sodium. The salt we use commercially in the US is highly processed and devoid of other minerals found naturally in more natural salts, such as Celtic sea salt. Without those other minerals, processed salt can exacerbate high blood pressure.
There are a lot of high-sodium ingredients in this dish. I suggest opting for low-sodium versions, such as low-sodium beef broth, low-sodium olives, etc.
I’m actually a fan of salt, just not the kind that’s most likely to be harmful.
Instant Pot Pizza Soup Recipe
Yields 8 bowls

- Ground beef, 1 lb, 85%
- Ground Italian sausage, 1lb
- Rao's Homemade Marinara, 2 cups
- Beef Stock, 2 cups
- Water, 1 cup
- Pepperoni, 6 oz
- Black Olives, 20 large
- Baby Portobello, sliced, 8 oz
- Italian seasoning, 1 tablespoon
- Cream cheese, 8oz, full fat
- Mozzerella, 8oz, shredded
- In either a 6 or 8 quart Instant Pot, use the saute function to brown the ground beef and the ground Italian sausage.
- Add broth, scrape the sides of the pot.
- Turn off the saute function, and add all of the remaining ingredients except the cream cheese and shredded mozzarella.
- Seal the Instant Pot and cook on High Pressure for 15 minutes.
- Turn off Instant Pot and allow to natural release for an additional 15 minutes, then open the quick release.
- Stir in the cream cheese.
- Serve in bowls and top with shredded mozzerella.
The timing breaks down as follows:
Prep: -10 minutes to assemble your ingredients, brown meat, and add the other ingredients. Cooking: -5 minutes to build pressure (it's less, that's a generous estimate) -15 minutes cooking on high pressure -15 minutes cooking during natural release of pressure -5 minutes for quick release.
